Gumdrop Cookies
1/4 cup shortening
1/4 cup butter or margarine
1 cup all-purpose flour
1/2 cup sugar
1/4 cup packed brown sugar
1 egg
1 tsp. vanilla
1/8 teaspoon baking soda
1 cup gumdrops, snipped

In a large mixing bowl beat the shortening and margarine or butter
with an electric mixer on medium to high speed about 30 seconds or until
softened. Add about half of the flour to the shortening mixture.
Then add the sugar, brown sugar, egg, vanilla, and baking soda. Beat
till thoroughly combined, scraping the sides of the bowl occasionally.
Beat in the remaining flour. Stir in the gumdrops.

Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets.
Bake in a 375° oven for 8 to 10 minutes or till edges are lightly,
browned. Cool on cookie sheets for 1 minute. Remove cookies
and cool on wire rack. Makes about 36.
Chocolate Confetti Cookies: Prepare Gumdrop Cookies as directed
at left, except substitute 1 cup coarsely chopped candy coated Milk chocolate
pieces for the snipped gum-drops. |
