Simple Snowflakes
Makes about 36.
2 cups all-purpose flour
1 ½ teaspoons baking
powder
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ teaspoon ground nutmeg
½ cup margarine or butter
¼ cup shortening
¾ cup sugar
1 egg
1 tablespoon orange juice or
lemon juice
Powdered sugar
1. In a medium mixing bowl
stir together the flour, baking powder, cinnamon, salt, and nutmeg.
Set aside.
2. In a large mixing
bowl beat margarine or butter and shortening with an electric mixer o medium
to high speed about 30 seconds or till softened. Add sugar and beat
till fluffy. Add egg and orange or lemon Juice and beat well.
Add flour mixture and beat or stir till well mixed. Divide dough
in half. Cover and chill at least 3 hours or till dough is easy to
handle.
3. On a lightly floured
surface, roll each half to 1/8 inch thickness. Cut with a 2 ½
inch scalloped round or star-shape cookie cutter. Using two sizes
of drinking straws, cut random holes from the cutout dough, twisting
straws slightly, if necessary. Place cutouts onto ungreased cookie
sheets.
4. Bake in a 375° oven
for 7 to 8 minutes or till edges are lightly browned. Remove cookies
and cool on wire racks. Sift powdered sugar generously over cool
cookies. |
SURPRISE SNOWBALLS
Makes about 36.
¾ cup margarine or butter
½ cup sugar
¼ teaspoon salt
1 egg
½ teaspoon vanilla
1 ¾ cups all-purpose flour
Candy-and-milk-chocolate covered peanuts, gumdrops,
jelly beans, and or candy-coated milk chocolate pieces
¾ cup sifted powdered sugar
1. In a large mixing bowl beat margarine or butter
with an electric mixer on medium to high speed about 30 seconds or till
softened. Add the sugar and salt and beat till fluffy. Add
egg and vanilla. Beat till thoroughly combined, scraping the sides
of bowl occasionally. With mixer on low speed, gradually add the
flour, beating till well combined.
2. Shape the dough into 1 -inch balls. Press
a piece of desired candy in the center of each
and shape the dough around it so you can't see the candy. Place balls
about 2 inches apart onto ungreased cookie sheets.
3. Bake in a 350° oven about 15 minutes or
till edges are lightly browned. Place powdered sugar in a plastic
bag. While cookies are still warm, transfer 2 or 3 cookies at a time
to the bag of powdered sugar. Gently shake cookies in powdered sugar
till coated. Cool on wire racks. When cool, gentle shake cookies
again in powdered sugar.
